Pork Fried Rice

    Nothing makes me happier than some good fried rice. It's really my comfort food, which may sound weird coming from a Midwest girl. The pork probably sold me on it.
     After coming across this dish, I make it regularly, and my dog loves when I make this dish, because she gets the leftover carrots.

Ingredients
     1 boneless pork loin chop, cut into 1/2 inch pieces
     1/4 cup chopped carrot
     1/4 cup of fresh broccoli
     1/4 cup of frozen peas
     1 green onion
     1 tbs of butter
     1 egg lightly beaten
     1 cup of cold cooked long grain rice
     4 1/2 tsp of reduced sodium soy sauce
     1/8 tsp of garlic powder
     1/8 tsp of ground ginger.


Directions
     In a large skillet, saute the pork, carrot, broccoli, peas and onion in butter.
     Once pork is no longer pink, remove entire mixture from skillet and set aside.
     In the same skillet, stir egg over medium heat, until completely set.
     Stir in rice, soy sauce, spices and pork mixture.
     Heat thoroughly.

Changes I Made!
    If you know me, the first thing you probably know I changed is removing the peas.
    I also upped the amount of green onion and had no problems.

Baked Potato Soup

   Baked potato soup is one of the first soups I learned how to make, and this recipe is my go to recipe, especially in the middle of winter, because most of the ingredients I have on hand at all times. Ingredients    2 medium potatoes, bakes and cooled    1 can of chicken broth    2 tbs of sour cream    1/8 tsp of pepper    1/4 cup of shredded cheddar cheese Directions    Peel potatoes and cut into 1/2 inch cubes.    Place 1/2 of the potato in a blender and with chicken broth.    Pour mix into sauce pan and add remaining potato, sour cream and pepper.    Cook over low heat until heated through.    Garnish with shredded cheddar cheese, and whatever else you want. Stuffed portobello

    This is a dish I always heard about, but have never actually had, until I made it myself for this blog.     I love mushrooms, but if there's one thing this recipe introduced to me is a love for white bean puree.    Overall, very good and hearty vegetarian dish.
