Veggie Tortellini Soup

    I've started a new cookbook! This time I'm going into Pioneer Woman's Come and Get It! book.
    I got this book for Christmas, and easily found dozens of recipes I want to try. Fun fact about my culinary history, when I was first out on my own trying to learn how to cook, I remember watching a Pioneer Woman episode, seeing a recipe I knew I could make and successfully made it.
    That recipe was egg in the hole, this one is veggie tortellini soup.

Ingredients
   8 cups of vegetable or chicken broth
Pre-cream mixture
   1 6 oz can of tomato paste
   1 10 ounce package of frozen mixed veggies
   1 9 oz package of fresh cheese tortellini
   1/2 cup of heavy cream
   1/2 tsp of parsley flakes
   1/2 tsp of dried basil


Directions
    In  a medium pot, bring the broth of a simmer, over medium heat.
    Add the tomato paste, and stir until it is well combined.
    Add the frozen veggies and return to liquid to a strong simmer.
    Add the tortellini and cook until just tender, 3 to 5 minutes.
    Add the heavy cream and stir until everything is combined.
    Top with parsley basil and salt and pepper to taste.

Changes I Made!
    I would love for veggie mixes to not have peas in them! Despite that I do enjoy this recipe.
    I cooked my tortellini by package directions.
    Right before serving, I also dashed some Parmesan cheese on this.

My Big Fat Greek Salad

    I dated a guy who's family is part Greek for years and loved the flavors his family introduced me to.     This large salad is great to for something light to eat, or if you used it the way I did: pre gotta-fit-in-this-dress diet. Curry, from Audrey

    This may be a surprise, but as a small town Midwest girl, I did not grow up eating curry. I don't think I ever even tried curry, until I moved to Iowa and worked a woman who lived in New York City for decades.     I was just learning how to cook, and I wanted other dishes to try and make.
