Mini Sausage Casserole

    Breakfast is not my strong suit, and I rarely eat eggs, so I wanted a recipe I thought could introduce eggs into my morning routine.

Ingredients
   Cooking spray
   1 lb of breakfast sausage
   1 medium onion, finely diced
   15 large eggs
   Dash of kosher salt
   1/4 tsp of black pepper
   1/4 tsp of chili powder
   1 cup of cheddar cheese
   1 medium bell pepper, finely diced


Directions
   Preheat over at 350 degrees and generously coat 18 muffin cups with cooking spray.
   In a large skillet, crumble sausage over medium high heat until its about 3/4 brown.
   Add the onion, and reduce heat to medium low.
   Cook until sausage is fully brown, and set skillet aside to cool.
   Crack the eggs into a large bowl and add salt, pepper and powder. Whisk together.
   Add the cheese and pepper.
   Add the sausage by the spoonful and mix together.
   Use a 1/3 cup of measure to scoop mixture into the cups.
   Bake for 20 minutes.
   Use a knife to cut out.

   I used regular sausage, and had to up the seasoning.]

Pasta Salad with Tomato, Mozzarella & Green Beans

   In the summer, I like to try new pasta salads. They can last for a few days, and you can add your own spin on it. Tortellini soup

   I am a fan of making soup. You make a giant batch at the beginning of the week and call it a day. Also Susie loves when I make this and waits for the carrot scraps. Ingredients     2 tbs of olive oil     1 medium onion, chopped     1 tsp of minced garlic     4 carrots, peeled and sliced into coins.     8 cups of chicken stock     1 cup of frozen peas     1 container of tricolor cheese tortellini     1 can of sweet, whole kernel corn, drained     2 cups of baby spinach Directions     In a large stockpot, over medium heat, heat the oil until shimmering.     Add the onion, garlic and carrot.     Saute for 5 minutes.     Pour in chicken stock and increase heat to high.     Bring to boil, and add peas, tortellini and corn.     Cook for 12 minutes.     Add spinach on top and wait for it to wilt. ...
