White Wine Rotini

    So, I try to avoid pasta, but its forever my comfort food. When I was first learning how to live on my own, pasta was one of the few dishes I knew I could make. So I figured, why not try to spice up my pasta game with a simple pasta dish with a little flare.
    And yes, the fact there is wine in this helped me decide this is the recipe I want to try.

Ingredients
    1 cup of whole wheat panko bread crumbs
    1/4 cup of Parmesan cheese
    1/4 cup and 2 tbs of olive oil
    3 tsp of minced garlic, divided
    8 ounces of rotini pasta
    2 medium sweet onions, thinly sliced
    1/2 cup of white wine, I used chardonnay
    1/4 cup of vegetable stock

Directions
    Topping
        Preheat oven to 400 degrees.
        Mix bread crumbs, Parmesan, tablespoons of oil, 1 1/2 teaspoons of garlic and a dash of salt in a small bowl.
        Spread the mixture in an even lawyer onto a baking sheet.
        Bake until golden brown, 5 minutes.

   Pasta
        Boil a pot of water and cook to directions.
        When done, drain and set aside.

   Wine sauce
         In a large skillet set to medium heat, heat the 1/4 cup of oil, until shimmering.
         Add sliced onions and cook for 25-30 minutes or until golden brown
        Add 1 1/2 teaspoon of garlic and wine.
        Cook down for 3 minutes
        Add stock and let it reduce for 5 minutes.

    Combine wine sauce and pasta in bowl, and top with pasta.

Changes I Made!
      First and foremost, I knew looking at this I wanted to add a protein, so while the onions were cooking down I added pancetta, when the onion started to turn colors. Dog owners, this will attract your pup, and if you're like me, you'll have to kick them out!
      I also used regular bread crumbs, because I'm not the biggest fan of whole wheat anything.
      This recipe also has the ingredient prep in a weird order. I would start with the sauce, then go to the pasta and finally the topping last.

Baked Potato Soup

   Baked potato soup is one of the first soups I learned how to make, and this recipe is my go to recipe, especially in the middle of winter, because most of the ingredients I have on hand at all times. Ingredients    2 medium potatoes, bakes and cooled    1 can of chicken broth    2 tbs of sour cream    1/8 tsp of pepper    1/4 cup of shredded cheddar cheese Directions    Peel potatoes and cut into 1/2 inch cubes.    Place 1/2 of the potato in a blender and with chicken broth.    Pour mix into sauce pan and add remaining potato, sour cream and pepper.    Cook over low heat until heated through.    Garnish with shredded cheddar cheese, and whatever else you want. Changes I made!    I do not mess with this recipe except what I add on top when I eat. This recipe is from Taste of Home.

Hello one and all,       Since living on my own, I've fostered a great love for cooking. It's how I show people I care, and I find great comfort in it.       Now, I have a friend who knows this about me and regularly buys me cookbooks as gifts, but I have never used them. I either ask family members for recipes or go online to for recipes. Pinterest has been my diet's best friend.
