Parmesan-Panko Chicken

   In the summer, I try my hardest to find recipes that won't heat up my kitchen, so many dishes I have to put away until its not 90 degrees outside. I'll give any pan sear recipe a shot, and for some reason I had a lot of Panko in my pantry. Ingredients    2 boneless skinless chicken breasts    1/2 cup of all purpose flour    1 tsp of kosher salt    1/2 tsp of black pepper    2 large eggs    1/4 cup of whole milk    1 cup of Panko breadcrumbs    1/2 cup of finely grated Parmesan    2 tbs of butter    2 tbs of olive oil Directions     1. Zucchini Fritters

     Zucchini is a food I did not eat at all as a child, but eat all the time as an adult. I try to find new ways to incorporate the squash on a regular basis. Ingredients    1 lb of zucchini, ends trimmed    1 cup of grated Parmesan cheese    1/2 cup of chopped green onions    1/2 cup of all purpose flour    1 tbs of baking soda    1 large egg, beaten    Juice and grated zest of 1 lemon    Kosher salt, ground pepper and hot sauce    1/2 cup of olive oil Directions    1. Taco Quesadilla

   I have not had good success with other Mexican influenced dishes, so I was hoping this recipe could change my mind. I talked to a new coworker of mine, who is Mexican and she reassured me this is more Tex-Mex than anything. Ingredients    1 1/2 lbs of ground beef    2 heaping tbs of chili powder    1 tsp of ground cumin    1/2 of cayenne pepper    3 tbs of tomato paste    3/4 of kosher salt    butter for frying    corn tortillas    12 ounces of grated Monterey Jack cheese    lettuce and salsa for plating Directions    In a large pan, brown beef and drain the excess fat.    Add the chili powder, cumin, cayenne, tomato paste, salt and one cup of water and stir to combine.    Simmer for a few minutes, to let flavors blend.    Heat a separate skillet over medium heat and smear butter on it.    Place tortilla on ...

Rice with Chicken and Veggies

   In summer months, I don't want to turn on the oven, but I like a good all in one dish. This dish feels a lot like a stove top casserole. Ingredients   5 cups of chicken stock   1 small onion, cut into chunks   1 large carrot, cut into chunks   2 stalks of celery, cut into chunks   3 cloves of garlic, peeled and crush   1/4 cup of olive oil   1 1/2 lbs of boneless, skinless chicken thighs, cut into 1 inch chunks   1 bayleaf   1 tsp of kosher slat   1 cup of dry white wine   2 cups of Arborio or Carnaroli rice   2 tbs of unsalted butter, cut into pieces pieces   3 tbs of parsley   1/2 cup of grated cheese similar to Grana Padano Directions    In a small saucepan, warm stock over low heat, and keep warm.    In a food processor, combine onion, carrot, celery and garlic to create a paste.    Heat olive oil in a medium Dutch oven over medium high heat.   ...

Quinoa & Kale Stuffed Portobellos

   I am a fan of stuffed portobellos. You can take them wherever you want based on the filling. I did a pepper and chickpea stuffing earlier in this blog, and this portobello goes in a completely different direction. Chicken & Zucchini with Horseradish Dressing

   I'm at a point  where I want to try a recipe or 2 that introduces new flavors or ingredients I have never cooked myself. Horseradish is an ingredient I don't think has ever made its way to a kitchen I have ever used. The rest of the recipe are items I have used in the past or on a regular basis. Ingredients    1 tsp of salt    2 fresh bay leaves    4 medium zucchinis    1 large red onion, thickly sliced    1 1/4 lbs of boneless, skinless chicken breast    2 tbs of jarred horesradish    3 tbs of red wine vinegar    1/4 cup of olive oil    2 hard boiled eggs, cut into wedges Directions    Bring to a boil a pot big enough to hold zucchini, onion and chicken.    Add bay leaves and salt liberally.    When the water is boiling, add zucchini and red onion.    Simmer until zucchini is tender.    Add chicken and continue t...

Pasta Salad with Tomato, Mozzarella & Green Beans

   In the summer, I like to try new pasta salads. They can last for a few days, and you can add your own spin on it. Ingredients    1 tsp of salt    1 lb of green beans, trimmed    1 lb of cavatappi    2 pints of cherry tomatoes, halved    1 lb of small mozzarella balls    1 cup of basil    1 cup of parsley    2 ripe tomatoes, seeded and cut into chunks    1/2 cup of toasted almonds    2 garlic cloves, crushed and peeled    2 tbs of red wine vinegar    1/2 cup of extra virgin olive oil Directions     Salad       Bring a large pot of salted water to boil.       Add green beans and cook for 6 to 7 minutes.       Remove beans with a spider, and put in ice water bath.       Drain and pat dry, cut into thirds.       Put pasta in boiling water and cook until a...

Sheet pan steak

  I tend to buy cheaper cuts of steak, and its nice to have a recipe that doesn't call for a lot of attention to the steak. Ingredients     2 red bell peppers, seeded cut in rounds     2 yellow bell peppers, seeded cut in rounds     1 large onion, cut in rounds     2 steaks, this recipe calls for ribeye     4 tbs of butter     Montreal seasoning Directions    Position one rack in the center and another on the highest level.    Preheat the broiler on high.    Arrange peppers and onions on pan.    Lay steaks on top.    Place 1 tbs of butter on each steak and sprinkle seasoning.    Place pan on the center rack for 3 to 4 minutes.    Use metal tongs, add rest of butter and sprinkle more seasoning on it.    Broil on the center rack for 3 to 4 minutes, if not brown enough, put on top rack for a minute. Crepes for 1

    Recipes for one is the hardest thing to find! I always have leftovers, which is great most of the time, but for breakfast foods, a lot of them don't hold. Ingredients    1 egg    1/2 cup of milk    1/3 cup of all-purpose flour    Dash of salt    1 tbs of vegetable oil Directions    In a small bowl, whisk together the egg, milk, flour and salt.    Heat skillet on high heat, and add oil when pan is very hot.    Add 1/3 of the batter and swirl in the pan, flipping once edges brown.   Serve immediately. Chicken Piccata

   This dish is chicken and pasta, with a custom sauce, and it screams my name. Ingredients    4 boneless, skinless chicken breasts    Kosher salt and black pepper    1/2 cup of all purpose flour    4 tbs of butter    4 tbs of olive oil    1 cup of dry white wine or chicken broth    3/4 cup of chicken broth    Juice of 2 lemons    1/2 cup of heavy cream    1 tsp of chopped parsely    1 lb of angel hair pasta, cooked by package directions Directions    Flatten chicken breast and season with salt and pepper.    Dredge chicken through flour and shake off excess.    In a large skillet, heat 2 tbs of butter and 2 tbs of oil and fry 2 chicken breasts at a time.    Fry 3 to 4 minutes each side.    Repeat add butter and oil with next set of chicken and set done chicken aside.    Pour wine, chicken...

Mini Sausage Casserole

    Breakfast is not my strong suit, and I rarely eat eggs, so I wanted a recipe I thought could introduce eggs into my morning routine. Ingredients    Cooking spray    1 lb of breakfast sausage    1 medium onion, finely diced    15 large eggs    Dash of kosher salt    1/4 tsp of black pepper    1/4 tsp of chili powder    1 cup of cheddar cheese    1 medium bell pepper, finely diced Directions    Preheat over at 350 degrees and generously coat 18 muffin cups with cooking spray.    In a large skillet, crumble sausage over medium high heat until its about 3/4 brown.    Add the onion, and reduce heat to medium low.    Cook until sausage is fully brown, and set skillet aside to cool.    Crack the eggs into a large bowl and add salt, pepper and powder. Fried Goat Cheese

   One of my favorite reality shows follows a group who works at a restaurant, and on the show they always talk about how amazing the goat cheese balls are, so I wanted to have my own little recipe to make at home. Ingredients    2 cups of mini pretzels    2 large eggs    1/2 cup of all purpose flour    8 ounces of goat cheese    Olive oil for frying   Directions    Grind pretzels in a food processor.    Place pretzels, eggs and flour in separate bowls.    In the egg bowl, whisk together with 2 tbs of water.    Cut goat cheese into 8 different logs.    Grab one slice and dredge in the flour, shaking off excess.    Dip in egg wash and then coat in pretzels.    In a skillet, heat 1/2 inch of olive oil over medium heat.    Fry slices for 45 seconds a side, until golden brown. Grilled Summer Vegetable Quinoa Salad

   Summer is around the corner, and I need more reasons to use my grill pan. Grain salads are a staple in my diet in the summer months, so this fit the bill. Polenta

   This is a dish I hear about all the time, but never had. So after enough Food Network one night, I decided I just needed to give this dish a try. Ingredients     5 cups of water     1 tbs of extra virgin olive oil     1 fresh bay leaf     1 tbs of kosher salt     1 1/2 cups of coarse yellow cornmeal Directions      In a large saucepan, combine water, oil, bay leaf and salt.     Bring mixture to a simmer over medium heat.     Sift cornmeal into water, stirring constantly with a wooden spoon.     Once added, adjust heat to just a few lazy bubbles.     Constantly stir until the polenta is smooth and pulls away from the sides of the pan.    I have been trying really hard to widen the foods I can make at home. I would gladly spend a bunch of money to have this dish delivered to my home, so being able to make this at home, brings a little joy to my heart. Granola

   Breakfast is not a meal I put a lot of thought into. I normally just grab some breakfast bars and head to work, unless I made some muffin tops (see previous post, they're amazing I promise).    I'm not the biggest fan of granola, but there's a few mixtures I do like, so I figured I'd give one a try.     I grew up on various casseroles. It is how one raises a proper Midwest girl. This doesn't scream Midwest dish to me, but it does introduce some new flavors to ones I grew up with. Eggplant Steaks

   For my birthday, I got a grill pan! My living situation doesn't allow me to own a grill, so it is the best thing I can get.    This is the first recipe I could find requiring my grill pan.      This recipe name is misleading since you use angel hair pasta, not spaghetti. It takes more steps than what this cookbook normally likes, but it still came together well.      My cast iron cook book breaks down what regions recipes come from. So, when I saw this recipe was a Midwest inspired recipe, I scratched my head. Most of the ingredients in this dish, I did not grow up using on a regular basis or ever. Chicken Salad

   My mom eats chicken salad a lot. Whenever we go to get tea, she normally gets the chicken salad. I often attach this dish to spring and summer, but I normally avoid it due to mayonnaise. In my family, its not unheard of to not like mayo. So when I found one with no mayo, I was very happy.     Stuffed shells are amazing in my mind! I am all for pasta stuffed with cheese. I like to order this when I go out, so its about time I try to give a recipe a whirl. Spaghetti with Chicken & Zucchini

      I love chicken, pasta and zucchini, so any dish with all three in one makes me a very happy person.     We all know the Pixar movie. The little rat running around helping a chef make the best version of this dish. I remember seeing it in theaters. So when I saw I had a version of the dish in my cookbooks, I had to try it! Spaghetti Carbonana

     I love pasta, and I love mixing up how I serve pasta. I'm normally not a big spaghetti fan, might have to do with how Giada pronounces it on Food Network, not sure, but I really wanted to try this sauce.      This recipe also has pancetta in it, which is my favorite addition to a good pasta dish. Ingredients     1 lb of spaghetti     2 tbs of olive oil     4 ounces of pancetta, chopped     4 large eggs     1/2 cup of grated Parmesan     Salt and pepper for seasoning     3 tbs of parsley Directions     Cook spaghetti according to packaging.      Heat a large skillet over medium high heat, and add oil and pancetta.     Brown pancetta for about 3 to 4 minutes.     Meanwhile, mix together eggs and Parmesan. Bean with Bacon Soup

    I am all about soup. The more soups I can try, the better, and this soup was brand new to my pallet.    This recipe is an overnight recipe, so be prepared for that. Ingredients    1 lb of dried great northern beans    4 cups of low sodium chicken broth    1 lb of thick cut bacon    1 onion, finely diced    2 large carrots, finely diced    2 celery stalks, finely diced    4 garlic cloves, salted    2 tbs of tomato paste    2 bay leaves    3 roma tomatoes Directions    1. Put the pound of beans in a large bowl, and cover them with at least 2 inches of water. Let them soak overnight.    2. Drain the beans and place them in a large pot.    3.      Sheet pan dinners are wonderful. Its the protein and sides all taken care of in one dish and its just a beautiful thing when you want to be a little lazier.      There's so many sheet pan chicken dinners, that its nice to see one that mixes it up a little bit and have a good marinate.     I've started a new cookbook! This time I'm going into Pioneer Woman's Come and Get It! book.     I got this book for Christmas, and easily found dozens of recipes I want to try. Fun fact about my culinary history, when I was first out on my own trying to learn how to cook, I remember watching a Pioneer Woman episode, seeing a recipe I knew I could make and successfully made it.     That recipe was egg in the hole, this one is veggie tortellini soup. Orange-blueberry muffin top

   I'm normally an on the run person in the morning. It takes forever to get me to crawl out of bed, and so for breakfast I want something I can grab real quick. Normally I just buy some breakfast bars, but I thought why not make my breakfast this week. So I went ahead and created these lovely muffin tops.
